Two New Butcher Counters Near Spanish Trail, and Why They Source Beef So Differently

November 5, 2026

In June 2026, 8 News Now reported that the national average for ground beef had climbed past $7 a pound. In the same story, chef James Trees of High Steaks at the Rio said a steakhouse's margins run closer to 4% or 5% than the 30% or 40% people imagine. Beef became one of the most noticeable lines on a grocery receipt this year.

That same year, two full butcher counters opened a short drive from the Spanish Trail gates. Both say they offer better meat for the money, and they go about it in opposite ways. Diamond Spur Butcher Shop & Deli on Fort Apache Road raises its own cattle. The Wise Ox at UnCommons belongs to a San Diego restaurant group that buys in volume. With holiday roasts coming up, those two supply chains are the most useful way to tell the shops apart.

Diamond Spur Owns the Ranch Behind the Counter

Chef Marc Marrone and Todd Lunger are both longtime Las Vegas hospitality figures. The Las Vegas Review-Journal reported in early June 2026 that their Diamond Spur Butcher Shop & Deli had just opened on South Fort Apache Road. The shop is the only retailer for Diamond Spur Provisions & Meats, and its butcher team handles sourcing and processing of the beef and other proteins.

The beef comes from upstream. According to Diamond Spur, the company runs ranches in Arizona, South Dakota, Kansas and Missouri with ranch partner Cindy Tolle. It names Diamond E in Arizona and Evergreen Ranching in South Dakota. All of the ranches are Audubon certified, and the cattle are 100% grass-fed and pasture-raised with no hormones or antibiotics. The shop lists Diamond E as 22,000 acres of grazing land in Arizona.

Marrone explained to 8 News Now why owning the whole chain matters for price:

"We have the ability to cut all that out. So what we did was we raised them. We processed them, put them on our own trucks and brought them down here to our butcher shop here in Vegas, as well as our plant in South Dakota."

He added that the company chose to pass along the savings instead of the usual distributor and processor markup, as 8 News Now reported.

You can see that model in the case. The counter carries ribeyes, New York strips, brisket and ground beef from the company's ranches, along with responsibly raised pork, chicken and eggs. It also takes custom cuts and special orders. The shop says it was inspired by the classic markets of Arthur Avenue in the Bronx and calls itself a community butcher shop and deli for southwest Las Vegas.

The Wise Ox Buys at the Scale of a Restaurant Group

The Wise Ox comes from the other direction. Chef Brad Wise founded San Diego's TRUST Restaurant Group. Nation's Restaurant News describes the group as 15 restaurants reaching from San Diego to Washington state and Las Vegas, with the Rare Society steakhouse as its flagship. The same October 27, 2026 report says the group has close relationships with its meat suppliers and buys in volume, which lets it pass value on to customers.

Diamond Spur keeps its prices down by owning the ranches. The Wise Ox does it by purchasing for a whole restaurant group. The Wise Ox says it sells the same premium beef, heritage pork, lamb and free-range chicken served across TRUST's restaurants, with every cut chosen by its chefs and cut by hand.

The Las Vegas shop opened Thursday, October 22, 2026, at UnCommons, according to the Review-Journal. It is the first Wise Ox outside Southern California, and it joins the Rare Society that opened at UnCommons in July 2025. Customers can buy steaks and dry-aged ground beef to cook at home, per NRN. The shelves also hold spices, rubs and marinades.

The hours matter more than they might seem. Diamond Spur is open every day. The Wise Ox is open Wednesday through Sunday, so a Monday or Tuesday trip for a roast should go to Fort Apache Road.

Ordering a Holiday Roast

Thanksgiving is Thursday, November 26. For a whole tenderloin, a standing rib roast or a brisket cut to a specific weight, call ahead instead of hoping the case has one.

  • Diamond Spur accepts custom cuts and special orders. Its site asks for a phone call at (702) 763-3567 for anything needed the same week. The shop also notes that it often sells out of favorites, so call ahead during busy hours.
  • The Wise Ox takes calls at 725-269-4733 and email at [email protected]. Keep the Wednesday-through-Sunday schedule in mind when planning a pickup.

How each shop sources its meat tells you what to ask when you call. At Diamond Spur, the question is which cuts the ranches have produced recently, since everything in the case comes from the company's own cattle. At The Wise Ox, ask what the chefs are dry-aging, since dry-aged beef is a big part of what it sells for home cooking.

The Deli Menus Follow the Same Sourcing

Both shops also run a deli, and the sandwiches reflect where the meat comes from.

Diamond Spur grinds its burgers in-house from its own beef and fries its potatoes in beef tallow. Its own site points to the price, a $6.99 cheeseburger. The rest of the menu includes a Hot Chicken Caesar Hero with Calabrian pepper spread, a chicken Parmesan sandwich, ranch steak frites, a meatball hero, a cheesesteak and a half chicken with fries. The Review-Journal's opening report also lists rotisserie chicken and soft-serve cones.

The Wise Ox menu comes from a chef with a steakhouse background. NRN lists smoked bologna, roast beef with Havarti and horseradish cream, and peppered turkey with chipotle aioli. Sandwiches are served until 5 p.m., an hour before the butcher counter closes.

Other meat-focused openings arrived in the southwest valley this year too. The Hat, the 75-year-old Southern California restaurant known for pastrami dip sandwiches, held its grand opening on May 6, 2026, at 6215 S. Rainbow Blvd. It is the chain's first location outside its home region, and the Review-Journal reported that it took a seven-year process dating back to 2019 at the same site. On Sunset Road, John Arena of Metro Pizza, who has been making pies in Las Vegas for nearly 50 years, opened Metro Sliceteria at The Bend, 8720 W. Sunset Road, Suite D-150, per the Review-Journal.

Back at UnCommons, Barry's has announced a 3,653-square-foot studio next to Todo Bien, with an opening planned for early 2027, according to the Review-Journal. One parking lot will then hold a steakhouse, a butcher shop and a fitness studio.

For a holiday table this year, both shops are close enough to Spanish Trail for a pickup run. Diamond Spur sells beef from cattle it raised itself. The Wise Ox sells beef chosen for a restaurant group's kitchens.
