Durango's Food Hall Is Making Room a Year Before Its Expansion Opens

October 29, 2026

Shortly after dawn on Friday, Sept. 18, a crane weighing roughly 650,000 pounds lifted a steel truss into the north side of Durango Casino & Resort, with a second crane helping. The truss weighs about 180,000 pounds and runs nearly 140 feet long and 20 feet tall. The Las Vegas Review-Journal reported that it was the largest piece of structural steel in the project, and that general contractor Suffolk Construction Co. made the lift.

Two weeks later, the changes reached Eat Your Heart Out, the resort's food hall on Durango Drive just south of the 215.

Three Original Stalls Are Leaving the Hall

Eat Your Heart Out opened with the resort in December 2023. On Thursday, Oct. 1, Station Casinos announced that three of its outlets and one lobby counter would close, according to the Review-Journal's Neon dining report.

  • Uncle Paulie's, the outpost of the L.A. deli inspired by New York delis, closed Wednesday, Sept. 30. It was one of the hall's original concepts. Its space will host a run of pop-ups until a permanent concept is revealed.
  • Yu-Or-Mi Sushi, also an original, closes Nov. 10. A replacement will be named later.
  • Vesta Coffee Roasters closes both of its Durango counters on Nov. 10, the original one in the food hall and the one in the lobby. A replacement will be announced later.

Station tied the changes to the construction in its own announcement. "These updates come as Durango continues work on its north-side expansion, which will introduce an expanded food hall, a state-of-the-art bowling venue, Moonshine Flats, and luxury movie theaters and more," the company said, as quoted by Neon.

That sentence links this fall's changes to the construction. The current hall is changing at the same time a larger hall is being built next door. A week after the announcement, KSNV News 3 still described the former Uncle Paulie's space only as home to a series of pop-up experiences. It also said the replacements for Yu-Or-Mi and Vesta would be announced later.

The Fiorella Space Shows How Durango Fills an Opening

Durango has replaced a vacated stall in this hall before, and the result was a well-known name. Fiorella Pasta Bar, from chef Marc Vetri, closed in March 2025. Neon called it the hall's highest-profile offering.

That space went to Villa's Tacos, the Michelin-recognized L.A. taqueria from chef-owner Victor Villa. It opened at 11 a.m. on Saturday, Aug. 15, according to Station Casinos. Eater Vegas reported that it is Villa's first location outside California. The menu centers on mesquite-grilled meats and blue-corn tortillas and includes several vegan options.

The last time a stall in this hall opened up, Durango filled it with an out-of-state operator making its first move into Nevada.

The Calendar Through 2027

  1. Sept. 18, 2026: The largest steel truss goes into the north expansion, which is near the midway point of its build.
  2. Sept. 30, 2026: Uncle Paulie's closes. Pop-ups follow in its space.
  3. Nov. 3, 2026: Red Rock Resorts, Station's parent company, is scheduled to release third-quarter results. A conference call follows at 1:30 p.m. Pacific.
  4. Nov. 10, 2026: Yu-Or-Mi Sushi and both Vesta Coffee counters close.
  5. Early 2027: Management said it hoped to share more about future projects, including a later Durango master-plan phase with hotel rooms and a spa.
  6. Second half of 2027: The company's target for opening the north expansion.

As of this week, the Yu-Or-Mi and Vesta counters have less than two weeks left.

What Stays Open Under the Same Roof

Durango's Eat Your Heart Out page currently lists ten vendors. Two of them are among the closures above.

Vendor Status as of late October 2026
Villa's Tacos Open since Aug. 15
Irv's Burgers Listed
Prince Street Pizza Listed
Ai Pono Café Listed
Shang Artisan Noodle Listed
Nielsen's Frozen Custard Listed
Oyster Bar Listed
DRNK Listed
Yu-Or-Mi Sushi Closing Nov. 10
Vesta Coffee Closing Nov. 10, food hall and lobby

After Nov. 10, the hall will still have burgers, pizza, tacos, noodles, oysters, frozen custard and drinks. It will have no sushi counter and no coffee counter until replacements are named.

Vesta Is Opening Closer to Blue Diamond

Vesta is closing at Durango while building another location in the southwest. Neon noted that word came in August of a new Vesta Coffee under construction at 7120 Blue Diamond Road, Suite A-100. The roaster's own locations page lists its Arts District and Sahara cafes along with the two Durango counters. It does not yet list a Blue Diamond address or an opening date. For now, the Blue Diamond cafe is a build in progress, so there is no opening date to plan a coffee stop around.

What the North Expansion Adds

The size of the current project is clearest next to the last one. Durango cost $780 million to build and opened in December 2023. A $120 million first expansion was completed in December 2025, and construction on the second began in January 2026.

First expansion, completed December 2025 North expansion, targeted for second half of 2027
Cost $120 million $385 million
Size More than 25,000 sq. ft. of casino space More than 275,000 sq. ft.
Slots 230, including 120 in a high-limit area About 400 more
Dining and entertainment A new bar Expanded food hall, 36-lane bowling center, luxury movie theaters, Moonshine Flats

FOX5 reported that the first expansion's casino-floor section opened Nov. 7, 2025. The high-limit room and a garage with nearly 2,000 spaces followed on Dec. 15, 2025.

The first expansion added gaming space and parking. The second adds the reasons to stay for an evening. The largest new venue is Moonshine Flats, a two-story, 29,000-square-foot country-western bar. Durango's North Expansion page lists it among the planned venues and estimates about 18 months of construction. A January Review-Journal story had Moonshine Flats opening in mid-2027. The company's August guidance gave a wider window, the second half of 2027, and it is the newer of the two dates.

The Nov. 3 Call Will Give the Next Update

Red Rock's leadership has said the property is performing well during construction. "Our Durango property continued to perform exceptionally well despite ongoing construction impacts and has firmly established itself as a meaningful growth driver within the Las Vegas locals market," Red Rock Resorts president Scott Kreeger said on the August earnings call, as reported by the Review-Journal.

On that same Aug. 4 call, management estimated that construction-related disruption at Durango would cost about $2.5 million in the third quarter. It said the disruption would continue until the project is finished in the second half of 2027. The call transcript also mentions a later Durango master-plan phase that would add hotel rooms and a spa. The company was still evaluating pricing and hoped to share more in early 2027.

The third-quarter report on Tuesday, Nov. 3 comes a week before Yu-Or-Mi and Vesta close. It is the company's next scheduled update and the next chance for a revised timeline on the north side. Until the replacement names arrive, the current lineup in the table above is the one to plan around.

The steel at Durango is planned to become bowling lanes, theaters and a larger food hall. If you own in Spanish Trail and want to talk through what nearby projects like this mean for your home, Vegas Listing Experts can help. Schedule a Call with Stephanie.
